Smooth vanilla oats with the warm, spiced compote are perfect for any time of the year. Plus, it looks so pretty!
Ingredients
Serves 1
Porrige
1/2 cup oats
1/2 cup milk
1/2 cup water
1 tsp honey
Pinch of salt
1/4 tsp vanilla extract
Topping
Large handful cherries (fresh or from a tin)
3 tbsp water
1 tsp honey
1/4 tsp cinnamon
1 tbsp almond butter (or any nut butter)

Method:
For the compote: Place the cherries, honey, water and cinnamon in a small saucepan. I don't bother de-stoning them but you can if you wish to. Bring to a boil, then reduce and simmer for 10 minutes, until the cherries are soft.
Mix together the porridge ingredients. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.
Top with almond butter and the cherry compote.
Notes and substitutions:
Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.
Milk: Any milk works, including soy and nut milks.
Honey: Any sweetener will do - maple syrup, sugar, agave etc.
Cherries: Fresh or from a tin, but not glacé cherries.
