Buttermilk Porridge

I discovered buttermilk porridge whilst perusing some old recipe books. Spoon by Annie Morris and Jonny Shimmin is a delightful book devoted to breakfast. I was intrigued by the idea of buttermilk porridge so had go and loved it. The buttermilk acts in two main ways: 1) it gives a slight tang which adds a more umami/savoury taste. This pairs beautifully with the sweet toppings I have suggested here. 2) It tenderises the oats as they soak, giving you a more creamy texture or porridge. Also if you don’t have buttermilk, no problem (who does have buttermilk in their fridge?!). I’ve got a super easy substitution below.

I have tweeked the original recipe, or rather, just done my own thing. Have a go, see what you think.




Serves 1

Ingredients

Porridge

  • 1/2 cup buttermilk (or 1/2 cup milk + 1.5 tsp lemon juice)

  • 1/2 cup oats

  • 1/2 cup water

  • 1/2 tsp vanilla extract

  • 1 tsp honey

Topping

  • Nut butter

  • Yoghurt

  • Berries

Method:

  1. if you are making your own buttermilk: mix the milk and lemon juice together. Leave to sit for 5 minutes before using

  2. Mix together the buttermilk and the oats. Leave to sit for at least 30 minutes

  3. Combine with the remaining porridge ingredients. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  4. Top with nut butter, yoghurt and berries

Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Buttermilk: I never have buttermilk so use the substitution above.

  • Honey: This can be replaced with any sweetener of your choice
