Tea Infused Porridge with Berry Compote

This bowl is beautifully bright with the berry compote. The porridge itself is delicately infused with a tea of your choice. I love Pukka tea - they have an amazing range of flavours and I honestly can't drink any other Lemon and Ginger tea after tasting theirs. What I particularly like about this brand is that the longer the tea infuses it releases natural sweetness, so their teas have a depth of flavour which I haven't found anywhere else. Yet they are also delicate and sweet. For this porridge I use their 'feel new' tea, which contains aniseed, fennel and cardamom. I think loads of their flavours will work here because of the nature of their teas, obviously if you have other tea brands try them as well.

Serves 1

Ingredients:

Porridge

  • 1 tea bag (of your choice)

  • 1/2 cup boiling water

  • 1/2 cup oats

  • 1/2 cup milk

  • 1 tsp honey

  • pinch of salt

Topping

  • Large handful of berries

  • 1 tsp honey

  • 1 tbsp water

  • 3 tbsp plain yoghurt

(Notes on substitutions found below the method)


Method:

  1. Pour the boiling water over the tea bag and leave to stand for 5 minutes.

  2. Remove the teabag and add the water to the rest of the porridge ingredients. On the hob: place ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  3. Place the berries, honey and water in a microwaveable bowl (or you can do this in a saucepan). Microwave the berry mixture for 2 minutes so the berries soften and release their juices.

  4. Top the porridge with yoghurt and the berry compote.

Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Tea: Any tea of your choice. Herbal teas and fruit teas work really well.

  • Berries: Fresh or frozen both work.
