Strawberry Cheesecake Porridge

Summer days call for summer puddings. And strawberry cheesecake is both indulgent and fresh. This porridge version is really delicious. I put some strawberries in the porridge mixture before cooking as I love the contrasting taste of fresh strawberries with cooked ones. Feel free to play around with the amount of sweetener in the yoghurt/cream cheese mix if you want it a bit less sweet.

Ingredients

Serves 1

Porridge


  • 1/2 cup oats

  • 1/2 cup milk

  • 1/2 cup water

  • 2 strawberries, chopped

  • 1 tsp honey

  • Pinch of salt

  • 1/4 tsp vanilla extract

Topping

  • Granola

  • 1 tbsp yogurt

  • 2 tbsp cream cheese

  • 1 tsp honey

  • Strawberry jam

  • Fresh strawberries

Method:

  1. Mix together the porridge ingredients. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  2. To make the cheesecake mixture, combine the yoghurt, cream cheese and 1 tsp honey.

  3. Top your porridge with the cheesecake mixture, granola, jam and fresh strawberries.


Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Honey: You can replace with the same quantity of any sweetener (maple syrup, sugar etc)

  • Cream cheese: If you haven't got cream cheese feel free to just use yoghurt.
