Strawberry, Brown Butter and Thyme Porridge

Brown butter is possibly one of my favourite things. The nutty flavour of the browned butter is beautifully complimented by fresh thyme. The strawberries add a summery freshness and brings out the thymes fragrant flavour even more. I also like to think of it as rather refined with the use of brown butter, herbs and fresh fruit. So I give you full permission to sit back and feel a little smug as you dive into your elegant creation.

Ingredients

Serves 1

Porridge

  • 1 tbsp butter

  • 1/2 cup oats

  • 1/2 cup milk

  • 1/2 cup water

  • 2 strawberries, chopped

  • 3 sprigs of thyme, leaves removed

  • 1 tsp honey

  • Pinch of salt

Topping

  • Strawberries

  • Fresh Thyme leaves

  • Almonds

(Notes on substitutions found below the method)

Method:


  1. First brown the butter. Place the butter in a saucepan and heat until a cappuccino-like foam forms, swirl to see that the milk solids have browned. Remove from the heat and add the thyme leaves. Leave to sit for 3-5 minutes

  2. Mix most of the thyme infused brown butter with the remaining porridge ingredients (keep 1 tsp for later). On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy. Cook in the microwave or on the hob as you usually would.

  3. Top with fresh strawberries, the remaining brown butter, almonds and fresh thyme leaves.

Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Honey: You can replace with the same quantity of any sweetener (maple syrup, sugar etc)

  • Thyme: fresh thyme is best here although you could use 1 tsp dried thyme. Or use fresh rosemary as a replacement - that would be stunning!
