Sticky Toffee Porridge

The combination of maple syrup and dates brings the deep, sweet, molasses flavour. You’ll be questioning whether you’re eating pudding or porridge.

Serves 1

Ingredients

Porridge

  • 1/2 cup oats

  • 1/2 cup milk

  • 1/2 cup water

  • 1 tsp maple syrup or brown sugar

  • Pinch of salt

  • 6 small dates, finely chopped (or 4 large ones)

  • 1 tbsp almond butter (optional)

Topping

  • Yoghurt

  • 2 dates, chopped,

  • Maple syrup

(Notes on substitutions found below the method)

Method:

  1. Mix together the porridge ingredients. On the hob: place them in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place them in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  2. Top with yoghurt, dates and maple syrup.

Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Dates: Any dates work. in an ideal world we would all be eating medjool dates, but lets be honest, they are pretty expensive. I usually just buy the cheapest dates I can find, and they are absolutely fine here. Some dates are bigger than others, so just vary the amount you put in the porridge depending on how sweet you like it.
