Spiced Plum and White Chocolate Porridge

This creamy, sweet porridge is contrasted beautifully with the tart, spicy compote. It's truly a match made in heaven.

Serves 1

Ingredients

Porridge

  • 1/2 cup oats

  • 1/2 cup milk

  • 1/2 cup water

  • 20g white chocolate, chopped

  • 1/2 tsp vanilla extract

  • Pinch of salt

Topping

  • 3 plums (variety of your choice)

  • 0.5 tbsps honey

  • 1 cinnamon stick (or 1/2 tsp cinnamon

  • 2 cloves

  • 1/2 tsp ground ginger

  • 1/2 cup of water

  • Toasted almonds

  • Nut butter

(Notes on substitutions found below the method)

Method:

  1. To make the compote. Chop the plums into segments and remove the stones.

  2. Place the plums into a saucepan with the spices and water. Cook on a low heat for 15 minutes.

  3. Once the fruit is soft, remove from the heat.

  4. To make the porridge. Mix together the porridge ingredients. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  5. Top with compote, almond butterand toasted almonds.

Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Honey: This can be replaced with any sweetener of your choice

  • Nut butter: any nut butter works
