Pear Bircher Muesli

This is fresh and very tasty, perfect for an alternative to porridge in the summer. The pear brings a different flavour than than traditional grated apple, which I really like.

I also add seeds in to my bircher for added texture and nutrients. You could replace these with nuts too or just more oats.


This is really adaptable, so make it and top it with whatever takes your fancy!


Ingredients

Serves 2

To soak

  • 1 cup oats

  • 4 tbsp seeds

  • 300 ml milk

  • 1 pear

To top with: your choice, here is what I do...

  • 1/2 pear

  • seeds

  • nut butter

(notes, variations and substitutions found below the method)

Method

  1. Chop the pear in half. Grate one half of the pear and leave the other half for the topping. I suggest wrapping in clingfilm and popping it in the fridge.

  2. Mix the grated pear with the remaining ‘soaking’ ingredients in bowl, cover and leave to sit overnight.

  3. In the morning top with slices of pear, seeds and whatever takes your fancy

Substitutions and variations

Milk: regular, soy or nut milks will all work.

Oats: I use quick cook oats as they soak up the liquid really well, but it's personal preference.

Seeds/Nut: I usually have a bag of mixed seed, which has sunflower, pumpkin, chia, flax and a whole load of others in there. Just use what you have in the cupboards.
