I feel rather romantic about this breakfast. Maybe it's because it's so simple. Maybe it's because it feels cheeky having whisky in the morning. Or maybe it's because it transports me back to blustery walks by the Scottish lochs.
Don't be fooled by the simplicity of this dish. The cream brings something truly majestic to it. And whilst it seems to be a lot of salt, this is essential to Scottish porridge so do not leave this out.
I hope as you consume this, perhaps whilst watching the rain tap on the windows or sat in the sunshine in your garden, that you will be transported to the rugged Highlands.
Serves 1
Ingredient
Porridge
1/2 cup oats
1/2 cup milk
1/4 cup water
2 tbsp cream
1 tsp honey
1/8 -1/4 tsp of salt
Topping
1 tbsp cream
1 tsp whiskey
2 tsp honey (optional)
(Notes on substitutions found below the method)
Method:
Mix together the porridge ingredients. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.
Top with a little extra cream and honey if you wish.
Notes and substitutions:
Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.
Milk: You really need to use dairy milk for this. Or use the lacto-free version. Nut milks do not give the same result - sorry.
Cream: double cream is my preferred option, but if you only have single then go for it.
