Ok. Prepare yourself. I think (she says tentatively), this is possibly my favourite porridge recipe ever. There, I said it. And here is why. It is fresh, zingy, floral and summery. Think of days with a glass of
elderflower cordial in one hand and a chocolate strawberry in the other. Can you picture it? Of course you can. The combination of flowery earl grey and sweet elderflower is a true delight. And right now I’m just picturing flower crowns and daisies and I dream of this.
Ingredients
Serves 1
Porridge
1 Earl grey tea bag
1/2 cup boiling water
1/2 cup oats
1/2 cup milk
Pinch of salt
2 tsp elderflower cordial
Topping
3 tbsp yoghurt
2 tsp elderflower cordial
Drizzle with honey
Blueberries
Nuts
Lemon zest
(Notes on substitutions found below the method)
Method:
Pour the boiling water over the tea bag and leave to stand for 5 minutes.
Remove the teabag and add the water to the rest of the porridge ingredients. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.
Mix the yoghurt and elderflower cordial together. Dollop the yoghurt mixture on the porridge and sprinkle with blueberries, nuts, lemon zest and a drizzle of honey.
Notes and substitutions:
Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.
Milk: Any milk works, including soy and nut milks.
Honey: You can replace with the same quantity of any sweetener (maple syrup, sugar etc)
