Chocolate Chip Cookie Porridge

This idea came to me whilst making my Brown Butter Chocolate Chip Cookies. I hadn't eaten breakfast on that morning, and it was a Saturday, so I thought why not have cookies for breakfast? But I wanted to mix it up a little (obviously) and so here we are. This porridge really does taste like cookie dough. DO NOT be tempted to replace the brown sugar with white sugar or honey. You might get away with maple syrup, but come on guys, if you're going to have cookie porridge, have proper cookie porridge. Similarly, the butter is also essential to give it that buttery cookie deliciousness. So, whilst it's not the healthiest, it sure is good.

Serves 1

Ingredients

Porridge

  • 1.5 tsp butter

  • 1.5 tsp brown sugar

  • 1/2 cup oats

  • 1/2 cup milk

  • 1/2 cup water

  • 1/4 tsp vanilla extract

  • Pinch of salt

Topping

  • Yogurt (or ice cream!)

  • 15 chocolate, chopped(about 3 squares)

  • Chocolate sauce (optional)

(Notes on substitutions found below the method)

Method:

  1. Melt the butter and then stir in the brown sugar. Add the remaining porridge ingredients and mix together. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  2. Top with yoghurt (or ice-cream), chocolate chunks and a drizzle of chocolate sauce if you fancy.

Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Sugar: you really need to use brown sugar (light or dark work), or you can use maple syrup at a push.

//Chocolate Chip Cookie Porridge//

This porridge really does taste like cookie dough. It's the combination of the brown sugar and the butter. So whilst this may not be the healthiest porridge on the planet, it sure is good.
