Chocolate and Ginger Porridge

I think everyone has their favourite brand of chocolate. Whilst I am a dairy milk girl for everyday, when I want to splash the cash a little Hotel Chocolat really is where it is at.

When having an evening in, me and my friend, Natasha, will buy a selection box from hotel chocolate and rate each chocolate out of 10 - it’s very serious. Anyway…this porridge for some reason reminds me of Hotel Chocolate. Maybe it’s because I think ginger and chocolate seems like a very grown up chocolate flavour, or maybe it’s just because when I made this the first time I added gold glitter to my porridge (just because why not?).


Serves 1

Ingredients

Porridge

  • 5 cm piece ginger or 1/4 tsp ground ginger

  • 1.5 tsp cocoa powder

  • 1/2 cup oats

  • 1/2 cup milk

  • 1/2 cup water

  • Pinch of salt

  • 1 tsp honey

Topping

  • Dollop of yoghurt

  • 3 squares of chocolate, chopped

  • Small piece of ginger, chopped

  • Handful of almonds, chopped

(Notes on substitutions found below the method)

Method:

  1. Mix together the porridge ingredients. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  2. Top with yoghurt, chocolate, ginger and almonds.

Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Honey: This can be replaced with any sweetener of your choice
