Chocolate and Cherry Porridge

Dark chocolate goes so well with deep red cherries. They ooze sophistication and I expect you will feel pretty classy consuming this gorgeous bowl.

Ingredients

Serves 1

Porridge

  • 1/2 cup Oats

  • 1/2 cup Milk

  • 1/2 cup water

  • 1.5 tsp cocoa powder

  • Pinch of salt

Topping

  • 1 large handful of cherries

  • 1 tsp honey

  • 3 tbsp water

  • Yoghurt

  • A few squares of chocolate

(Notes on substitutions found below the method)

Method:

  1. For the cherry compote: place the cherries, honey and water in a saucepan. You can de-stone the cherries if you wish, but I tend not to bother. Bring them to a boil, then reduce the heat and simmer gently for 10 minutes.

  2. Mix half of the compote mixture with the remaining porridge ingredients. On the hob: place them in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place them in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  3. Top with yoghurt, cherry compote and chocolate chunks

Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Cocoa powder: You can also use cacao powder.

  • Cherries: you can use fresh or half a can of tinned cherries.
