Carrot Cake Porridge

Carrot cake is hands down my favourite cake. Hands down. Cinnamon spiced sponge with a creamy icing and crunchy walnuts. What more could you want? This porridge encapsulates all those flavours and textures for a breakfast treat.

Serves 1

Ingredients:

Porridge

  • 1/2 carrot, grated

  • 1 tsp honey

  • 1/2 cup milk

  • 1/2 cup water

  • 1/2 cup Oats

  • 1/4 tsp cinnamon

  • Pinch nutmeg, grated

  • 15g nuts, chopped

  • 15g raisins

Topping

  • 2 tbsp cream cheese (or yoghurt)

  • 1 tsp honey

  • Sprinkle of nuts, raisins

(Notes on substitutions found below the method)

Method:

  1. Place the grated carrot, honey and water in a bowl and microwave for 2 minutes to soften a little and release the flavour.

  2. Mix together with the remaining porridge ingredients. On the hob: place them in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place them in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  3. Mix the cream cheese and honey together and spoon on top. Sprinkle with nuts, raisins and grated carrot.

Notes and substitutions:

  • Milk: Any milk works, including soy and nut milks.

  • Honey: You can use any sweetener you like.
