Blueberry Pie Porridge

I originally named this porridge 'blueberry cheesecake', but I have a rather romantic attachment to blueberry pie so I changed it to this instead.


Something magical happens when you cook blueberries. They transform from sapphire blue to deep magenta, becoming delectably sweet in the process.


The combo of sweet blueberry compote, vanilla yoghurt and crunchy granola imitate the flavours and textures in a large slice of blueberry pie. It's a beautiful thing.


Ingredients

Serves 1

Porridge

  • 1/2 cup oats

  • 1/2 cup milk

  • 1/2 cup water

  • 1 tsp honey

  • Pinch of salt

  • 1/4 tsp vanilla extract

Topping

  • Handful of blueberries

  • 1 tsp honey

  • 2 tbsp water

  • 3 tbsp yoghurt

  • 1/8 tsp vanilla

  • Handful granola

(Notes on substitutions found below the method)


Method:

  1. Mix together the porridge ingredients. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  2. Place the blueberries, honey and water in a saucepan on a medium heat. Cook until just softening, 4-5 minutes.

  3. Mix the yoghurt with vanilla extract. Top your porridge with the vanilla yoghurt, blueberry compote and granola.

Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Honey: You can replace with the same quantity of any sweetener (maple syrup, sugar etc)

  • Blueberries: Try with blackberries or raspberries!
