Black Forest Gateau Porridge

Now personally I'm not a massive fan of black forest gateau. I always just find the sponge a bit soggy and I'm not a fan of the overpowering cherry liqueur combined with creamy icing. It's just not my vibe. BUT I love the idea of chocolate and berries, which is where this recipe came from. And it works. It really does.

Ingredients

Serves 1

Porrige

  • 1/2 cup oats

  • 1/2 cup milk

  • 1/2 cup water

  • 1 tsp honey

  • Pinch of salt

  • Big handful of mixed berries

  • 1 tsp cocoa powder

Topping

  • Jam

  • Yoghurt

  • Mixed berries

  • Chocolate chunks

(Notes on substitutions found below the method)

Method:

  1. Mix together the porridge ingredients. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  2. Swirl the jam through the porridge and top with with yoghurt, berries an chocolate chunks

Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Cocoa powder: You can also use cacao powder.

  • Berries: frozen or fresh are both fine.

Take that classic cake into your next favourite breakfast. Chocolate cake becomes chocolate porridge. Whipped cream filling becomes dollops of yoghurt. Kirsch-soaked cherries because juicy berries and fruity jam.

It works. It really does.
