Banoffee Porridge

Caramelised banana, creamy kefir and rich chocolate.

A healthier twist on that classic pud. The dates bring further caramel undertones when paired with a hint of cinnamon.

Serves 1

Ingredients

Porridge

  • 6 dates

  • 1 banana

  • pinch of cinnamon

  • 1/2 cup oats

  • 1/2 cup milk

  • 1/2 cup water

  • Pinch of salt

Topping

  • 1 tsp butter

  • 1 tsp honey

  • Chocolate (grated)

  • Kefir (or yoghurt)


(Notes on substitutions found below the method)

Method:

  1. Place the dates in a bowl, cover with boiling water and leave to sit for 3 minutes. Strain the water off and then mash the dates. Chop the banana in half and add one half to the dates with cinnamon (put the other half to one side for late). Continue mashing the banana-date mix until smooth.

  2. Mix the remaining porridge ingredients into the banana-date combo. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.

  3. Slice the remaining banana. Heat the butter and honey in a pan, place the sliced bananas in the pan and fry for a couple of mins until golden.

  4. Top your porridge with kefir (yoghurt), banana and grated chocolate.

Notes and substitutions:

  • Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.

  • Milk: Any milk works, including soy and nut milks.

  • Honey: This can be replaced with any sweetener of your choice
