Aubergine and Halloumi Bake with Berries

Squeaky halloumi, soft aubergine and sour berries


The flavours in this are gorgeous. The halloumi is gorgeously crispy, whilst the aubergine is lightly spiced with coriander. It is finished off perfectly with a herb vinaigrette and balanced with acidic, sour berries.


It's so easy to throw together and you only need a handful of ingredients.


Aubergine and Halloumi with Berries

Ingredients

Serves 4

  • 2 aubergines, each sliced length-ways into 8 wedges

  • 2 tbsp olive oil

  • 4 tsp coriander

  • 200g halloumi, sliced into 0.75cm thick slices

  • salt and pepper

  • 50 g frozen mixed berries, defrosted

Herb vinaigrette

  • 25g basil

  • 2 tbsp olive oils

  • juice of 1 lemon

Method

  1. Preheat the oven to 200oC/180oC(Fan). Place aubergine is a baking tray, drizzle with olive oil and sprinkle with coriander, salt and pepper. Roast for 30 minutes.

  2. Add the halloumi to the dish and roast for a further 15 minutes, until golden and crispy.

  3. Meanwhile make the vinaigrette. Place all the vinaigrette ingredients in a blender and pulse until smooth.

  4. Remove the baking tray from the oven and sprinkle with the defrosted berries and drizzle with the vinaigrette. Serve with new potatoes or couscous.

Notes, variations and substitutions

  • Berries: berries that work are raspberries, blueberries, blackcurrants, red currents, blackberries. I usually buy a mixed bag of frozen berries.
