Chicken with Peanut and Lime

Perfect for a dinner party.

This dish is so perfect for dinner parties. It is all in one dish - therefore saving a tonne of washing up. In addition it is neither too reserved, nor too 'out there' for friends who may not be up for the more experimental of dishes. Regardless of who or where or when, this is delightful for gathered friends or you on your own.

Chicken with Peanut and Lime

Serves 4

Ingredients

  • 1 tbsp oil

  • 1 onion

  • 3-4 chicken breast, cut into bite-size strips

  • 2 cloves garlic, finely sliced or crushed

  • 1 can coconut milk

  • 3 tbsp peanut butter

  • 1 tbsp soy sauce

  • 2 limes, zest and juice

  • 2 courgettes, shaved into ribbons with a vegetable peeler

  • Handful coriander

  • Chilli flakes

Method

  1. Place a pan on a medium heat. Add the oil and soften the onions for 4 minutes.

  2. Add chicken strips and garlic, fry for 4 mins until browned.

  3. Add coconut milk, peanut butter, soy sauce and the limes juice.

  4. Simmer for 20 mins until chicken is cooked.

  5. Add courgette and simmer for 2 minutes.

  6. Garnish with coriander, a sprinkling of chilli flakes and the lime zest. Serve with rice and/or flatbreads.

Notes, variations and substitutions

  • Chicken: replace with tofu or halloumi cheese for a veggie alternative. Or use aubergine.

  • Limes: can use lemon, different flavour but also delicious!

  • Courgettes: can also use carrots, shaved into ribbons.

  • Nut: omit nut butter if you have an allergy.
