Blender porridge? Bare with me on this one.
Ok, transport yourself back to being 6 years old, getting ready for school on a Monday morning. You’re dressed in your bright red/blue/green/yellow school jumper, it’s cold outside but the kitchen is warm, you sit down at the table and are presented with a bowl of steaming Ready Brek. You top it with golden syrup or sugar, stir it around and lift a big spoonful to your mouth, careful to blow on it for a good few seconds (having learnt the hard way burning the roof of your mouth one too many times). It’s warm, creamy and oh so scrummy.
Now if you never had Ready Brek as a child, well, you missed out. But the good news is here is the chance to recreate that moment!
Microwaves seen like a great way of making porridge – quick, easy and no fuss. Yet, I’ve never been a fan of normal porridge in the microwave, I always think it just tastes a bit bland and not creamy like you do it on the stove. So, I wanted to find a way of creating lovely, creamy porridge in the microwave. And I think I’ve cracked it!
All you do is put your oats and milk in a blender, whizz it up for a few seconds and then microwave it. The taste is unlike any other porridge, smooth and creamy, resembling a grown-up Ready Brek.
So sit back, relax and enjoy a comforting bowl of the creamiest, smoothest porridge.
Speedy Blender Porridge
Serves 1 (generously)
Ingredients
½ cup oats
½ cup milk
¾ cup water
Handful of extra oats (optional)
Toppings
(see notes for ingredient replacement and store cupboard substitutions below the method)
Method
Place oats, milk and water in a blender (Nutribullet-style blenders works best, but a handheld blender does an equally good job). Blend for 30 seconds.
Transfer to a bowl and add a tbsp/handful of oats. If you like a bit more texture, do add more - just adjust the cooking time.
Place in the microwave for 1 minute. Stir to break up any lumps, then microwave for a further 30s depending on the consistency you like.
Top with whatever you fancy – my favourite is peanut butter, honey and cinnamon.
Notes, additions and substitutions
Texture: I like a smooth porridge but you might like a bit more texture to it. In that case I would experiment with the ratio of blended oats to non blended. For example, why not try blending half the oats, then adding the rest in unblended before microwaving. You may have to adjust cooking times etc, but let me know how you get on!
Oats: use whatever oats you have. Because you are blending them it doesn't really matter.
Milk: I use whole milk but use anything you have, including nut mylks.
Toppings: go crazy! Nuts, seeds, berries, bananas - you names it
