A good salad is a wonderful thing and the great thing is you can put whatever you want in it.
A salad for lunch can seem a bit 'meh' but just stick to a few basic rules- some leafy greens, bright veg, some protein and then one or two additional flavours and voila!
This is barely a recipe, since it is basically a way of using up left overs in the fridge but I thought I would write basic quantities down so , as with all my recipes, you can substitute in what you have.
However I would recommend eggs! I always have them in my cupboard, they are a great addition to any salad, not only making it more exciting but a good protein boost, keeping you fuller for longer. Oh and the best bit, with a runny yoke it's like having an extra dressing! Poaching eggs is quick and takes just 2 minutes to do.
This is the perfect lunch food when at home and fancying something fresh.
Spectacular Fridge Findings Salad
Serves 1
Ingredients:
LEAVES - ( 2 handfuls of leaves like iceberg, rocket, spinach - mix it up depending on what you have)
MAIN COMPONENT - (1 handful roasted veg/beans/pulses/chicken/chorizo/bacon)
SECOND COMPONENT - (1/2 handful sundried tomatoes (homemade recipe to come!)/cheese (like feta)/nuts/seeds)
ADDITIONAL COMPONENT (optional) - (1/2 handful of an extra veg element - grated carrot, tomato, cucumber, celery)
1 egg
Chunky wholemeal bread
Dressing:
1 tbsp olive oil
1 tsp vinegar of your choice
1 tsp mustard
1tsp honey
pinch of salt and pepper
Method:
Place all the salad ingredients in a bowl minus the egg and bread.
Make the dressing by whisking all the ingredients together.
Bring a pan of water to the boil, then turn down to a gentle simmer. Swirl it around to create a mini whirlpool and crack you egg in the centre. Poach for 2 minutes until the white is firm but the yoke is still soft.
Place the egg on top of your salad and drizzle with the dressing. Serve with your bread, ready to dunk in the egg yoke.

This is just the basic formula which works for me with salads but go crazy with quantities and flavours. As with all the recipes here they are designed for you to make your own and use up whatever is in your cupboards.
