I have to admit, I am not a bircher fan (sorry!). However, I felt like I was missing out on the bircher craze, so I caved and had a go. My conclusion (and it is a personal one) is that to get the same depth of flavour in bircher muesli that you would get in a porridge it must be rich with fruit and nuts. Therefore, this is just that. It’s packed full of goodness - lots of dried fruit and nuts. This gives it both a gorgeous texture and a lovely flavour. I don’t think I will be going down the route of many other bircher flavours, for me this is the one and only. And boy it’s good.
Serves 2
Ingredients:
1 cup oats
1 Apple grated
1/2 cup dried fruit , chopped
1/3 cup nuts, chopped
1.5 cup milk
1/2 cup water

Method:
Mix together the ingredients, cover and leave to soak overnight.
Top with fruit and nuts.
Notes and substitutions:
Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.
Milk: Any milk works, including soy and nut milks.
Apple: you can replace this with pear
Dried fruit and nuts: use whatever you have to hand.
