Sweet Soda Bread

Perfect for that 4 pm snack with jam (or even clotted cream!).


This is a simple twist on my superb soda bread. It's so simple and can be thrown together in a matter of minutes. The basic recipe is below with suggested additions further down to make it your own. My favourite is the pecan pie one.

Sweet Soda Bread

Ingredients

  • 500g plain flour

  • 1 tsp fine salt

  • 40g sugar

  • 1 tsp bicarbonate of soda

  • Added extras/flavours (see below method)

  • 350ml buttermilk (or 300ml milk with 1.5 tbsp lemon juice/vinegar added) you might need a bit more or not the whole amount depending on the flour you use

Method

  1. Heat your oven to 200°C/Gas 6 and line a large baking tray with baking parchment.

  2. Put the flour, salt, sugar and bicarbonate of soda into a large bowl and mix well. This is also the point to add your flavourings, either sweet or savoury.

  3. Make a well in the centre of the mixture and pour in half the buttermilk. Use your fingers, a spoon or a knife to incorporate the buttermilk. Continue adding the buttermilk until all the flour has been incorporated and your dough is slightly sticky.

  4. Shape the dough into a ball flatten it slightly. Place on the baking tray and use a sharp knife to mark the loaf into quarters, cutting deeply into the dough but not quite through the base. Dust the top of the loaf with flour. Alternatively, place in a lines 2 lb loaf tin.

  5. Bake for 30–35 minutes until the loaf is golden brown and sounds hollow when tapped on the base.

  6. Transfer the soda bread to a wire rack and either leave to cool or if you can’t resist tear of a chunk and slather with butter!

  7. It’s definitely best to eat it on the day, but you can freeze it too.


Notes, substitutions and variations​

  • Flour: You can use any flour. I also like to replace 40g of flour with oats for a bit of bite. Because it's not dependant on gluten to build structure, unlike other bread, you can use gluten-free flours easily as a replacement.

  • Buttermilk: If you don't have buttermilk you can just use 300 ml milk with 1.5 tbsp of vinegar or lemon juice.

Flavours


Pecan pie

  • 100g chocolate chunks

  • 80g pecans (roughly chopped)

  • 2 tsp cinnamon

Spiced fruit loaf

  • 2 tsp mixed spice

  • 1 tsp cinnamon

Chocolate orange

  • Zest of 1 orange

  • 100g dark chocolate chips
