Strawberry and Nutella Galette

Chocolate and strawberries.


The galette trend has been a feature of lock down baking, but as usual I was a little bit late to the party. However...I have finally made it and I guess it’s a twist on a regular galette.

One thing I wanted to avoid was a soggy bottom - which is tricky with strawberries particularly. However, I have a simple trick. Preheating a baking tray in the oven to get it super hot means before placing the tart on it means you get a crisp bottom every time . Mary Berry would be proud!

We all know that Nutella and strawberries is a winning combo and this galette does that is justice! It is so incredibly delicious and also very simple to make. it’s also great cold the next day - move over pancakes, there is a new kid on the block.

Strawberry and Nutella Galette

Serves 6

Ingredients

200g plain flour

110g butter, cold and cubed

1.5 tsp sugar (plus extra for dusting)

3-4 tbsp ice cold water

400g strawberries, stalks removed and sliced in half

1 tbsp cornflour

1 tsp honey

4 tbsp Nutella

1 egg, beaten (or you can use milk)

Method

  1. Preheat the oven to 190oC/170oC(fan) and place a baking tray in to warm.

  2. For the pastry rub together the flour, butter and sugar to form breadcrumbs. Add water, a tablespoon at a time, until the pastry just comes together. Form into a ball, cover with clingfilm and place in the fridge until needed.

  3. Meanwhile, combine the strawberries, cornflour and honey in a bowl, ensuring they are tossed together well.

  4. Remove the pastry from the fridge and place on a sheet of baking paper. Roll out to an oval/circle shape to about 0.5cm thick. Spread the nutella over the pastry, leaving a 1 inch boarder. Top with the strawberries and then fold over the pastry to cover the outermost berries. Brush the pastry with egg or milk and sprinkle with sugar.

  5. Remove the baking tray from the oven and slide the tart and the baking paper onto the tray. Bake for 35 minutes until the pastry is golden.

  6. Serve with creme fraiche and more Nutella!

Notes, variations and substitutions

  • Flour: You can use gluten free or spelt also works wonderfully.

  • Nutella: To make this slightly healthier, you could use your own homemade Nutella with this recipe

  • Butter: You can use lacto-free spread too.

  • Fruit: Other fruits are lovely - how about try banana?
