This is light and refreshing, with a little bit of crunch. The lemon and strawberry are delicious together and this is perfect for slightly overcast summer mornings.
In order to make this a breakfast rather than a dessert I've reduced the amount of sugar and kept the topping to oats and seeds, rather than flour. I like using a mixture of oats and seeds for added crunch, but feel free to make it your own with whatever you fancy! You can also scale it up to make a big batch.
Ingredients Serves 1
Filling
6 strawberries, chopped
Pinch of lemon zest
1 tsp honey (optional)
Crumble
1/2 cup oats, nuts and seeds
1 tsp oil or butter (melted)
1.5 tsp honey
pinch of salt
lemon zest
Topping (optional)
Yogurt
Seeds
Strawberries

Method
Preheat the oven to 180oC/1060oC(fan) and find a large remekin or oven proof bowl.
Place the strawberries in the ramekin and stir with the lemon and honey.
In a separate bowl mic together the topping ingredients, then spoon over the strawberries and press to compact a little.
Place in the over for 20-25 minutes until the filling is bubbling and the top is golden.
Top with yoghurt, seeds and fresh strawberries.
Notes, variations and substitutions
Topping: use whatever you have, I like a mixture of oats, nuts and seeds. You could also add in flour or ground almonds for a more traditional crumble topping.
Oil: vegetable oil, coconut oil or melted butter all work wonderfully.
Fruit: use fresh or frozen. If using frozen just blitz the fruit in the microwave to ensure they are thawed before putting the topping on.
