No churn raspberry ripple crumble ice-cream

Elegantly simple.

This ice cream is so creamy and delicious it won’t last you long. It’s made all in one bowl before throwing it in the freezer to chill.


Condensed milk provides a rich, vanilla sweetness and also makes it super creamy. The golden syrup isn’t there for flavour at all really (although it does add depth). Rather, its main purpose is to stop ice crystals forming. This keeps the ice cream silky smooth and meltingly rich.

I guess because I'm using biscuits it's kind of cheese-cake/crumble ice-cream, but since there wasn’t any cream cheese in sight I felt I couldn’t really call it a cheesecake ice cream. Anyway, call it what you wish, it is delightful.

No churn raspberry ripple crumble ice cream

Makes 1 pint (size of 1 tub of Ben & Jerry’s)

Ingredients:

  • 200g condensed milk (1/2 a tin)

  • 250 ml double cream

  • 1 tbsp golden syrup or 2 tsp liquid glucose

  • 1.5 tsp vanilla extract

  • Pinch of salt

  • 3 tbsp raspberry jam

  • 3 shortbread biscuits, crumbled

Method:

  1. Place the condensed milk, cream, golden syrup, vanilla and salt in a bowl. Beat with an electric whisk or in a free-standing mixer until stiff peaks form.

  2. Pour half into a container, then dollop half of the raspberry jam on top and swirl through with a knife. Add the rest of the ice cream mixture in and swirl through the remainder of the jam (this ensures you have an even distribution of jam through the whole tub).

  3. Top with crumbled biscuits and put in the freezer for 3-4 hours.

Notes, substitutions and variations

  • Cream: you can use whipping cream, but single cream won’t work I’m afraid. You can also use coconut milk. To do this, place the coconut milk tin in the freezer for half an hour, then open it and scape out the solid part at the top and leave the liquid in the can. Then proceed as usual.

  • Golden syrup: use liquid glucose (as stated above) or honey will also work.

  • Raspberry jam: any jam can be substituted in. Or if you like it more tart, then use fresh raspberries – just mush them with a fork and then swirl through.

  • Biscuits: Any biscuits will work

Variations

  • Jam: use different flavours of jam

  • Herbs: add 3 tbsp fresh thyme

  • Citrus: Add the zest of half a lemon for a fresh, citrus twist.
