A ray of sunshine
This breakfast is so perfect for a lazy Saturday morning. It's super easy and can be whipped up in no time at all. The key is to not rush dipping the bread in the batter - you want it to soak up all the delicious eggy mixture.
This is both beautiful to behold and consume. You've got bright lemon, refreshing yoghurt and red strawberries - find me a better breakfast than that.

Loving Lemon French Toast
Serves 2
Ingredients
Toast
2 tbsp butter
1 large egg
4 tbsp milk
1/2 tbsp sugar (optional)
1/4 lemon zested and juice (about 1/2 tbsp lemon juice)
3 pieces of fresh white bread
Topping
4 tbsp yoghurt
3 tbsp lemon curd
Handful of strawberries
Nuts and seeds (optional)

Method:
Place a frying pan on a medium heat and melt the butter in it.
Mix together the egg, milk, sugar, lemon zest and juice. Place the bread in egg mixture, leaving it to soak for 20 seconds on each side.
Place the eggy bread in the saucepan and fry for a couple of minutes on each side until golden and crispy.
Divide the toast between two plates and top with yoghurt, lemon curd, strawberries and nuts if you fancy.
Notes, variations and substitutions:
Milk: substitute for any dairy free milks.
Lemon: you could also use orange
Lemon curd: if you haven't got any you could use honey and a dash more zested lemon.
