'All the best parts of a crumble'
This was a quote from one of my colleagues when I made these. My favourite part of a crumble is obviously the topping.
To be honest when eating crumble I would be very happy to just eat the crumble with the fruit soaked chewy bits and leave the fruit. The topping just is the best bit.
The sour berries go wonderfully well with the sweet white chocolate. I also love the addition of marzipan, although this is completely optional.
Berry, white chocolate and marzipan shortcake slice
Ingredients
Makes 16 bars
225g sugar
200g butter
1 Egg
1 tsp vanilla essence
240g flour, sifted
2 tsp baking powder
2 cups mixed berries (I like the tartness of blackcurrants)
75g white chocolate, chopped
150g marzipan (optional)

Method
Preheat oven to 180oC/106oC (fan) and line a 22cm square tin with baking paper.
Cream together the butter and sugar until light. Add the egg and vanilla extract, beat well.
Fold in the flour and baking soda until just combined. Place in the freezer for 20 until firmed up a little.
Press two-thirds of the mixture into the base of the baking paper.
Scatter the berries over the base, then sprinkle over the white chocolate.
Crumble the marzipan into the remaining shortcake (this step is optional). Use a knife to break up the lumps and ensure the marzipan is mixed in. Crumble the shortcake mixture on top of the berry layer, lightly pressing into the berries and chocolate.
Bake for 25-30 minutes, or until the shortcake goes lightly brown.
Refrigerate until cool or place in the freezer for 1.5-2 hours.
Notes, variations and substitutions
Berries: use any berries you fancy.
Chocolate: milk chocolate works really well too.
Shortbread flavour: Add the zest of 1 lemon or orange to add a citrus twist.
