I love trying unusual flavour combos, but whilst this might seem unusual it actually makes complete sense. Let me explain...
I once read that tomatoes and strawberries have the same flavour components, therefore in theory they should be interchangeable in recipes. Tomatoes and balsamic vinegar is a classic combination and therefore I thought 'why not balsamic and strawberries?' Balsamic vinegar has this amazing flavour. I got given an amazing bottle of it for my birthday and it's so so so delicious! It is intensely tangy, but also sweet and earthy. It therefore pairs wonderfully with the roasted strawberries, whose flavour mellows in the oven as the become fuchsia pink gems.
Ingredients
Serves 1
Porridge
1/2 cup oats
1/2 cup milk
1/2 cup water
1 tsp honey
1/4 tsp vanilla extract
1/4 tsp balsamic vinegar
Pinch of salt
Topping
3 strawberries, halved
2 tsp honey
3 tsp balsamic vinegar
1 tbsp pinenuts, toasted (optional)
Extra balsamic and honey to drizzle

Method
Preheat your oven to 180C/160 fan. Place the strawberries on a non-stick baking sheet, drizzle with the honey and balsamic vinegar. Roast for 15 minutes.
Add the remaining porridge ingredients to the Pimm’s and cook in the microwave or on the hob. On the hob: place the ingredients in a saucepan, bring to boil and simmer for 4-5 minutes stirring regularly to make it rich and creamy. In the microwave: place the ingredients in a microwave proof bowl, then microwave on high for 1 minute, give it a good stir for 30s minutes. Put back in the microwave for 2-3 minutes stirring regularly to make it rich and creamy.
Top with the roasted strawberries, pine nuts and a drizzle of honey and balsamic vinegar.
Notes and substitutions:
Oats: I use regular porridge oats, but you can use any type. Just adjust the cooking time.
Milk: Any milk works, including soy and nut milks.
Honey: You can replace with the same quantity of any sweetener (maple syrup, sugar etc)
